Curriculum Highlights

NUTRITION AND FOODS I

The students will become aware of their food habits and the importance of the six (6) basic nutrients as related to diet and wellness. There will be various lab experiences where the students work together to prepare a variety of foods. The students will more fully understand the major concepts related to foods and nutrition through class activities, food preparation, and experiments conducted with food.

NUTRITION AND FOODS II

The students will explore various trends related to foods and nutrition. The class includes special cooking techniques, sports nutrition, consumer issues & dining out, cultural foods, technologies in the food industry, and careers related to food and nutrition. Students will practice advanced skills in food preparation through lab experiences.

FOOD SERVICE MANAGEMENT I

The ProStart Culinary Arts 1 course will help students explore and prepare for careers in the food service and hospitality industry. It includes skill development in commercial food production, management, and service. The curriculum includes the study of foods and nutrition, safety and sanitation standards and commercial food preparation skills. The course meets Nebraska Department of Education standards and national foods industry regulations. The course will include field trips, chef speakers, observations and Serv Safe sanitation certification.

FOOD SERVICE MANAGEMENT II

ProStart 2 includes history of the foodservice and lodging industry, the art of service, marketing and menu development, purchasing and inventory control, and accounting practices. In the ProStart 2 course students will continue developing skills in food production and catering and customer service.

INTRO TO MEDICAL CAREERS

This course focuses on developing an awareness of the various health care skill standards needed for employment in medical careers. Introduction to Health Careers is designed to give an overview of the therapeutic, diagnostic, support, health informatics, and biotechnology research systems of the health care industry.

MEDICAL TERMINOLOGY

This class is designed to help students identify, spell and define medical terms related to the diagnoses, pathology and treatment of the major body systems. Students will use this as a basic foundation to all health care career pathways.

HEALTH SCIENCE MODULES

This class utilizes a high-level multimedia curriculum designed to deliver knowledge and much needed hands-on experiences in a variety of health-related career area (Dental, Imaging Diagnostics, Laboratory Procedures, Pathogens and Disease, Pharmacology and others). The class utilizes a variety of equipment, tools and software applications and case studies that stimulate conditions in the workplace and apply to all area of health careers.

RELATIONSHIPS

The purpose of this course is to help students develop and apply personal skills needed for building and maintaining successful relationships in families and society. Areas of focus will include: human development, personality assessment, problem solving, critical thinking, friendships, dating and marriage, and family issues.
Community resources and responsibilities will be explored and related to individual and family needs. Students will also learn about careers related to human relationships and family issues.

PARENTING I

Students will learn about careers related to child development and parenting. This course offers students an opportunity to discover the role of parenting from pregnancy through infancy and to work toward better parenting skills. Units of study include pregnancy, preparation for parenthood, and infancy. Students will learn basic care techniques and explore the physical, emotional, social, intellectual, and behavioral characteristics of infants.

PARENTING II

Students will learn about careers related to child development and parenting. This course explores issues related to the development of toddlers and preschool-aged children. Students will acquire knowledge of effective parenting skills for toddlers and preschoolers and explore issues of quality child care. Additionally, they will explore the physical, emotional, social, intellectual, behavioral, and moral development of children.
